Feature Recipe: Banana Muffins

One of my favorite recipes my mom included in the cookbook she gave me is banana muffins. They are cheap to make, relatively healthy, and oh so delicious! Plus, it is a great way to get rid of almost-rotten bananas or bananas you’ve thrown in the freezer.

Here’s what you’ll need:

1 ¾ cup flour

¾ teaspoon baking soda

¼ teaspoon salt

1 cup sugar

2 eggs

¾ cup oil

3 tablespoons milk

1 cup mashed bananas (about 2 whole bananas)

½ cup chopped pecans or walnuts (if desired)

 

Stir dry ingredients together first. Then mix in eggs, oil, and milk. Then stir in bananas and nuts until just blended.

Bake at 350 degrees for 1 hour if baking as bread. Muffins take less than half that time, depending on size of the muffins and your oven. Check the bread frequently to ensure it is cooked to perfection.
